Schwarzwälder Kirschtorte / Black Forest Cake
Ingredients:
- 180g Salted butter
- 75g Dark chocolate
- 300g plain flour
- 350g Soft brown sugar
- 30g cocoa powder
- 1 tsp bicarb
- 2 medium free range eggs
- 200g Greek yogurt
- 500g jar Preserved cherries
- 250ml double cream
- 100g mascarpone cream
- 2 tbsp honey
- 100g melted dark chocolate
- Preheat the oven to 160C.
- Put the butter and 75g chocolate broken into chunks in a small pan and gently heat until completely melted.
- Mix together the flour, sugar, cocoa and bicarb with a pinch of salt in a mixing bowl.
- Whisk the eggs and yogurt together.
- Scrape the melted chocolate mixture and egg mixture into the dry ingredients, add 100ml boiling water and whizz briefly with an electric whisk until the cake batter is lump free.
- Divide the mixture between the tins and bake for 25 minutes until fully baked.
- Whisk the double cream and mix in the mascarpone and honey, then drain your cherries ready to decorate.
- Keep the liquid the cherries come in as you can boil it to half its volume to make a delicious syrup.
- To build the cakes cut them in half to create more layers to your cake.
- Start with a base layer of cake, then add some cream, spread to the edges and top with cherries.
- Add a drizzle of the cherry syrup and top with another layer of cake.
- Repeat the process until you have finished, then pour over the melted chocolate and serve.
